Lavender Chai Panna Cotta

Course: Dessert
Cuisine: Lavender & Chai

Ingredients

  • 1 cup whole milk
  • 1 tbsp unflavoured gelatin powder
  • 3 cups whipping cream
  • 1/3 cup PURE Infused Maple Syrup – Lavender and Chai
  • 1 tbsp sugar
  • Pinch of salt

Instructions

  • In a small saucepan, combine the cold milk with gelatin by sprinkling the gelatin powder over the surface of the milk and gently stirring. Let the gelatin soften for 5 minutes. Place saucepan over medium heat, stirring constantly until the gelatin dissolves. This will take about 5 minutes.
  • Add the cream, Pure Infused Maple Syrup, sugar, and salt and cook, stirring constantly until the sugar dissolves, about 2 minutes. Remove from heat and let cool for a few minutes and pour into 6 small ramekins.
  • Cover the surface of the custards with plastic wrap and chill for at least 6 hours before serving.
  • To unmold the panna cotta, dip the bottom of the ramekin into a shallow bowl of hot water for a moment and then invert the ramekin over a small dessert plate. Finish with an additional drizzle of Pure Infused Maple Syrup – Lavender and Chai.

Lavender & Chai

For millennia, the sweet smell of lavender was prized for its relaxing and calming influences. We just think it tastes great, which is why we use it to infuse PURE maple syrup with unique floral qualities. Lavender’s fragrant and slightly spicy notes are perfectly balanced by deep and dusky Indian masala. It’s the ideal complement to sweet treats like panna cotta, crème brulee, tea cakes or scones. The lavender really pops when we drizzle it over strong, aged cheeses such as cheddar or gouda. For something more subtle, sweeten a café latte with it – delicious!

How To Use

  • Panna cotta and crème brulee
  • Tea cakes and scones
  • Warm drinks (coffee, tea, lattes or hot chocolate)
  • Cold drinks (homemade iced tea or lemonade)
  • Strong aged cheeses such as cheddar or gouda (the lavender really pops!)
  • Paired with fresh peaches, blueberries, strawberries or raspberries (even a fresh fruit salad)
  • Liberally brush it on fresh pineapple, peaches or pears before grilling for a truly sensational caramelized treat.
